Wholewheat pita breadPita bread is a popular middle eastern staple which is flat bread with pocket.

Ingredients 



1.5 cups wholewheat flour 
1/2-1 cup water
1 tablespoons yeast
1 cup white flour
Salt
1 tablespoons sugar 
1 tablespoons olive oil

Recipe 


Warm the water to lukewarm temperature . 
Take 1/2 cup water first and stir in sugar. 

Add yeast and leave to proof after covering with a kitchen towelMeanwhile mix flours ,salt and oil in a bowl.
After ten minutes yeast would have bloomed. Add the yeast water mixture to flour mix and combine together kneading a dough.Since we are using whole wheat flour more water would be needed to make a smooth dough. Knead for 8-10 minutes and make dough.

 Keep in a greased bowl and cover with kitchen towel.Let it rest until doubled in size which would be around 1-1.5 hours.Now once dough has doubled, knead it again and divide into equal size balls like for chapati but slightly bigger in size. Cover balls and leave for 30 minutes.

After 30 minutes the balls would have increased in size. Preheat oven to 230 C. 

Take each ball and roll in a disc like poori but little thicker. Keep them covered until oven is ready.Lay the pita breads on baking tray and bake for 8-10 minutes. 
They will puff up.
Remove from oven and keep in kitchen towel wrapped.

 Once cooled you can slice them into half and make delicious pita sandwiches stuffing the pockets.
