Caramel banana upside down wholewheat cale





Well  the upside down caramel cakes are to die for in a gloomy and rainy weather to give the warmth from caramel and cinnamon. And for rest of the days you can just top it with icecream! Well so it's an all rounder overall. With so much of variety to choose from pineapple, apple , plum and pears! So when I wanted to make caramel cake I chose to use banana for a change . Some for the base and rest for batter. Results were awesome and using date syrup and wholewheat flour was an icing on cake literally. 

Ingredients:
1 cup wholewheat flour 
1/4 tablespoon baking powder 
1/4 tablespoon baking soda 
1/2 tablespoon vanilla extract 
1/3 cup date syrup 
1 tablespoon unsalted butter 
1 tablespoon brown sugar 
1/2 tablespoon cinnamon powder 
1 large ripe banana 
1 tablespoon curd
1/4 cup canola oil
Handful fresh cherry 

Recipe:
Heat butter in pan on stove, add brown sugar and cinnamon and stir well keeping a check it doesn't get burnt. Remove from gas after 2 minutes and pour in a baking pan spreading evenly across. Arrange sliced banana in circular pattern over sugar butter mixture. Place cherries in between as you wish! 
Let's prepare batter now. Take all wet ingredients- oil, mashed banana, date syrup,vanilla extract, curd in a bowl and whisk to combine everything well. Add flour, baking powder and baking soda to this and stir to combine, do not over mix. Pour batter on the banana mixture in pan ensuring you don't disturb the arrangement . Gently spread batter evenly. Bake in preheated oven at 180C for 40 minutes. 
After removing from oven, wait for 5 minutes. Scrape sides on sids of pan amd invert in a playe. Serve warm!

Peanut butter banana chocolate chip cookies



Somehow I can't think of many recipes when it comes to peanut butter . While its good source of protein and replaces butter in baking, its very strong and salty taste is not greatly liked by everyone although its very popular in US but we Indians are still not very acceptable to it or so I feel. Anyways still once in awhile I try to experiment with it and today is one of those days. Again this recipe is a very quick and clean one which doesn't take much of time as you can just prepare dough and while it rests in refrigerator you can do some other work , come back and bake it. I made this today morning before going to work so you can understand what I mean.
These days I am trying a lot of such recipes where effort and time in kitchen is reduced and I can make them while getting along with some other work. 
Who wouldn't love that right!
Ingredients:
2 tablespoon white flour
4 tablespoon wholewheat flour 
1 tablespoon honey
2 tablespoon peanut butter 
1/2 tablespoon vanilla extract 
2 tablespoon chocolate chips 
1 ripe banana 
1/2 tablespoon baking powder 
1 tablespoon milk

Recipe:
Whisk both flours with baking powder and keep aside.
In another bowl mix mashed banana, peanut butter , vanilla extract , milk and honey well. Add flour to this and mix everything together. Stir in chocolate chips and combine well.
Refridgerate dough for 20 minutes. 
After 20 minutes drop the the cookies into a baking tray covered with parchment paper using spoon and pres gently.
Bake in preheated oven at 180C for 12-15 minutes as they turn golden on top.















Fresh fruits coconut milk chiaseeds parfait




Well after reading a lot about health benefits about chiaseeds I finally ordered them to see why they have become so popular recently and how to include them in diet. The very first recipe I came across was for pudding and parfait and unlimited versions of them with variety of flavors and fruits. I narrowed down to one using fresh fruits and coconut milk as I had some leftover from the blueberry icecream I tried couple of days back. Also this is something you can prepare ahead the night before and have in breakfast next morning. I had a lot of fresh fruits available like mangoes, cherry, banana and berries. What a better way to have them all with the chia seeds to prepare yourself for marching ahead you day at work. This is really easy, hassle free, no processed foods recipe which is rich and wholesome. So go ahead and try this.

Ingredients:
1/3 cup chiaseeds 
3/4 cup coconut milk
1/2 tablespoon vanilla extract 
1 tablespoon honey 
Freshly cut mango, banana
Cherry and berries 

Recipe:
Mix the milk, vanilla extract, honey and chiaseeds together in a bowl and pour in a mason jar. Cover the lid and refridgerate for couple of hours, atleast one hour but if you are preparing for breakfast next day refridgerate overnight.
Remove from fridge and layer the cut fruits one by one.
Serve chilled!








Peanut butter swirl oat brownie







Well It headly happens that I repeat a recipe often so much so that next time I want to make it I need to refer to my blog. So after making versions and variations of brownie like zucchini, beetroot, oats, avacado, wholewheat flour , I was looking to make something new to satisfy the chocolate cravings, be healthy, tasty and different! I had browsed through peanut butter swirl brownie recipe earlier but didn't get a chance to try yet. I made improvements to oriyrecipe replacing sugar with half of date syrup, oats with flour completely and canola oil for butter. I think this should be good enough for a dessert. So here goes the recipe,

Ingredients:
1 cup ground oats
1 tablespoon chocolate chips
1/3 cup date syrup 
1/3 cup brown sugar 
1/2 tablespoon baking powder
2 tablespoon peanut butter
2 tablespoon cocoa powder 
1 egg
1/3 cup canola oil
1 tablespoon vanilla extract 

Recipe:
Mix together egg, sugar, date syrup, vanilla extract and oil . Whisk to combine well. In another bowl whisk together flour, baking powder and cocoa powder. Combine dry ingredients to wet and mix lightly . Stir in choclate chops. Pour in a lined baking pan . Heat peanut butter for a minute in microwave so it softens. Pour over batter and using knife create swirl on top without over mixing. Bake in preheated oven at 180C for 30-35 minutes.

Caramelised onion mushrooms bruschetta




Ingredients:
1 baguette 
1 cup mushrooms 
1/3 cup chopped onions 
1 tablespoon balsamic vinegar 
Salt
Basil leaved
1 tablespoon mozzarella cheese 
1 slice cheddar 
2 tablespoon extra virgin olive oil
1 tablespoon finely chopped garlic 

Recipe:
Heat 1 tablespoon olive oil in a steel wok and add chopped onions and garlic and fry till onions start to caramelised. Now add chopped mushrooms and cook for 5 minutes. Add salt and vinegar and let it cook for 2 more minutes.
Slice baguette bread and arrange on a baking tray. Brush olive oil on top and place shredded cheese slice on top of each piece. Put mushrooms mixture and top with basil leave and mozzarella evenly each slice. 
Bake in preheated oven for 10 minutes at 180C

Blueberry coconut milk icecream



Well with my recent success at various recipes or rather attempts with coconut milk, I am very excited to continue exploring more what this super tasty and rich non dairy milk has to offer. It's just awesome to be used for any icecream and after making mango and chocolate icecream this time I tried blueberries one. With limited set of ingredients and healthier yummier icecreams these recipes with coconut milk are must try and you can always make ahead and keep all flavors ready in your freezer for those sweet cravings to indulge in without being too guilty. 
Stay tuned as I continue this journey to try my hands at various desserts with coconut milk! 

Ingredients:
1 cup coconut milk
2 tablespoon sweetened condensed milk
1/2 cup frozen blueberries 
Recipe: 
Blend thawed and strained blueberries in a food processor. Whip together all ingredients till everything is mixed well. Pour in a bowl and freeze. Take out from freezer every half an hour and churn with a spoon. Do this a couple of times till icecream is set. Do not let over freeze to prevent crystals to form.

Ragi chocolate banana date bread




Well it has been a really long time since I baked anything with ragi flour. I did make a couple of recipes for cake and breads not recently. So when I got bored of all other kinds of breads and cakes I decided to again go back and try using ragi for a change. It was so long back I made ragi cake that I had to revisit my blog for checking out the recipe. But this time I brought a twist and completely removed sugar substituting with ripe bananas and date sugar. The flour proportions remain same as 2:1:1 for ragi, wholewheat and wheat flours. I also added cocoa powder and some chocolate chips to hide in the ragi and date flavor only to make it even more disguising and appeasing for chocolate lover kids who can not even think of what  actually goes in there is ragi, dates and bananas! And you can't tell it either so try it out yourself to be pleasantly surprised. And yes did I mention I put this all together in 10 minutes with two bowls , baking pan and whisks without any preparations or electric mixer. So it's completely thumbs up recipe with low on effort, time and calories but high on chocolate and taste. 

Ingredients:
1 cup ragi flour
1/2 cup wholewheat flour
1/2 cup white flour
1/2 cup date syrup 
1 egg
2 tablespoon chocolate chip 
1/3 cup cocoa powder 
1/2 cup oil
2 ripe bananas 
1/2 tablespoon baking powder 
1/2 tablespoon baking soda 
1 tablespoon vanilla extract 

Recipe:

Take a bowl and mix all wet ingredients- egg, oil, date syrup, vanilla extract and mashed bananas using a whisk till everything is well combined. In another bowl mix all dry ingredients together- ragi, white and wholewheat flours, baking powder, soda , cocoa powder. 
Gently fold in dry mix into wet one stirring gradually to mix. Stir in chocolate mix. Do not over stir. Pour in baking tray lined with parchment paper and bake in preheated oven at 180C for 40 minutes.
