Well after reading a lot about health benefits about chiaseeds I finally ordered them to see why they have become so popular recently and how to include them in diet. The very first recipe I came across was for pudding and parfait and unlimited versions of them with variety of flavors and fruits. I narrowed down to one using fresh fruits and coconut milk as I had some leftover from the blueberry icecream I tried couple of days back. Also this is something you can prepare ahead the night before and have in breakfast next morning. I had a lot of fresh fruits available like mangoes, cherry, banana and berries. What a better way to have them all with the chia seeds to prepare yourself for marching ahead you day at work. This is really easy, hassle free, no processed foods recipe which is rich and wholesome. So go ahead and try this.
Ingredients:
1/3 cup chiaseeds
3/4 cup coconut milk
1/2 tablespoon vanilla extract
1 tablespoon honey
Freshly cut mango, banana
Cherry and berries
Recipe:
Mix the milk, vanilla extract, honey and chiaseeds together in a bowl and pour in a mason jar. Cover the lid and refridgerate for couple of hours, atleast one hour but if you are preparing for breakfast next day refridgerate overnight.
Remove from fridge and layer the cut fruits one by one.
Serve chilled!
