Muesli Granola bar



Somehow I always related granola bars to workout. It could be with how they were promoted when introduced into Indian market but whatever it was I could imagine having one of those after one goes through intense workout. Well that was I only till I tried on myself and figured out we can have it otherwise too. They are ready to go snack which is easy to carry and store without much ado about how, where and  what to munch. There is only one thing though, like all the other snacks the one available off the supermarket shelves come with its own share of additives which are not so natural and appealing to me. So I hardly buy them but bake my own. And believe me there are so many versions and variations we can try and we can always make a different kind each time. I simple go by what is available in my kitchen and just add it to the recipe. That simple it is, a truly one bowl recipe.
So this time when I thought of making it I realized I didn't have any oats (thanks to oats idli I make all the time) and couldn't wait for weekly grocery stock so went ahead and used the muesli I had .
I just added whatever nuts and sees I could get hold off and do not mind to skip some these if you don't have them. I wanted to add chia seeds too but maybe next time when i make with oats.
The muesli  already had some sugar so keep a check on how much we add more. Other than that we are good.

Ingredients:

2 cup Muesli - I one i added had following as ingredients - Rolled Oats (43%), whole wheat flakes (28%), Ragi flakes (4%), invert syrup,corn flakes(3%) , Almond (3%), honey (3%), malt extract, raisins(1.5%), wheat bran, oat bran

1/3 cup desiccated coconut
1 tablespoon chocolate chips
1/3 cups canola oil
1/3 cup brown sugar
1/2 cup date syrup
1/3 cup pumpkin and melon seeds
2 tablespoon flax seed powder
2 tablespoon raisins

Recipe:
Take the cereal in a large bowl and add all other dry ingredients. Mix well. 
Now add date syrup and oil . Mix everything together so oil and syrup coated evenly throughout. 
Preheat oven to 180 C and arrange parchment paper cross wise on a square pan as shown below.
Pour the mixture on it and press firmly using hands or back of a spoon. This is really important so that we can get everything stick together to be cut as bar else they will fall apart and 
crumble. One they are done let them cool, even better if you leave them in refrigerator to cool completely which makes it so much easier to cut.
After few hours of cooling cut using a knife in bars and store in air tight container. They are good for around a week when stored at room temperature.
