Well, how many types of bread and cakes can you make ? I think the list is endless, more so with same key ingredients there are so many variations you can take . I am still discovering them and loving each one of them! So what's special about this one is that it has carrot, zucchini and bananas and still you can't make out those veggies in the cake. This one is a marble cake and I replaces the white flour with half of wholewheat flour. I kept sugar to minimum and left it to bananas to give the natural sweetness so its a little less sweet but you can add just 2 more tablespoon of sugar to suggested amount to make it more sweet. I just topped mine with hot chocolate sauce.
Ingredients:
1/2 cup white flour
1/2 cup wholewheat flour
2 tablespoon cocoa powder
1 tablespoon vanilla extract
1 tablespoon cinnamon powder
1 egg
1 tablespoon milk
1/4 cup oil(canola)
1/2 tablespoon baking powder
1/2 tablespoon baking soda
2 ripe bananas
1.5 cup grated zucchini and carrot(1/2 zucchini, 1 carrot)
1/4 cup brown sugar
2 tablespoon thawed blueberries
Recipe:
Prepare the loaf pan with parchment paper and keep aside. Preheat oven to 180 C.
Sieve the flours, baking powder, baking soda in a bowl.
Take oil, sugar and egg in a bowl and whisk together. Now add mashed banana, vanilla extract, cinnamon powder. Mix again and add grated zucchini , carrot. Gradually add the flour without over mixing. Transfer 1/3 of mixture in another bowl, adding cocoa powder and milk to it.
Pour the batter (without cooca) in the pan, add blueberries and pour over the chocolate batter too.
Do not mix together but level on top gently.
Bake for around 45 minutes at 180C till done.
