Zucchini chocolate date syrup chip bread



Well this is truly 5 minute recipe. I didn't even use my electric blender this time and just took 2 bowls and got started. So although I have shared zucchini bread recipe earlier, I had to share this one as its real quick and simple. I actually made this while having my morning lemon honey water and just pushed it in oven in 5 minutes. And after 30 minutes I had my warm and dark zucchini bread ready! What more could you ask for. Can't get easier than this really. I used date syrup but you could make yours at home by cooking dates in little water for 5 minutes until they are mushy. 

Ingredients:
1/2 cup flour
1/2 cup oats
3/4 cup date syrup 
1 egg
1 cup grated zucchini 
Vanilla extract 
1/3 cup canola oil
1 tablespoon baking powder 
1/2 tablespoon baking sofa
1/4 cup chocolate chips

Recipe:
In a bowl mix all wet ingredients together- date syrup, oil, egg, vanilla extract and zucchini. Just whisk together till well combined.
In another bowl take flour, oats, baking powder, baking soda. Mix them and fold in the wet ingredients mix. Do not over mix . Stir in chocolate chips.
Bake at 180C in preheated oven for 30-35 minutes in a tray lined with parchment paper.
Let it cool before slicing into pieces.
